Manakish is one of the most beloved breakfast foods in the Levant. Fresh, warm, and simple, it is often called the “Levantine pizza,” but its identity is deeply traditional and unique.

What is Manakish?

Manakish is a soft flatbread baked in the oven and topped with ingredients like za’atar (thyme mix), cheese, or minced meat. It is usually prepared fresh in bakeries early in the morning, filling the streets with a warm, inviting smell.

Za’atar Manakish (Most Popular)

The most traditional version is za’atar manakish, made with olive oil and a blend of thyme, sesame, and sumac. It is simple but full of flavor.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 1/2 tsp salt
  • 3/4 cup warm water (add slowly as needed)
  • 2 tbsp olive oil (plus more for brushing)
  • 🌿 Za’atar topping:
  • 3 tbsp za’atar mix (thyme, sesame, sumac)
  • 3–4 tbsp olive oil (to make a paste)

Directions

1Make the dough a bowl, mix flour, yeast, sugar, and salt.
Slowly add warm water and mix until a soft dough forms.
Add olive oil and knead for about 8–10 minutes until smooth.

Cover the dough with a cloth and let it rest for 1–1.5 hours, until it doubles in size.

2Shape the dough

Divide the dough into small balls.
Roll each ball into a flat circle using a rolling pin.

3Add topping

Mix za’atar with olive oil to form a paste.
Spread it evenly over each dough circle, leaving a small edge


4 Bake

Place on a baking tray and bake in a preheated oven at 220°C for 8–12 minutes, until the edges are lightly golden.

Serve warm, ideally with tea, labneh, or fresh vegetables.
